Thai Green Curry

A personal favourite!

Ingredients (serves 4 people)
4 Skinless, boned breasts of chicken (thinly sliced)
2 Tablespoons of olive oil
1-2 Tablespoons of Green Curry Paste
2-3 Fresh red chillies (chopped with seeds)
4 Fresh Thai sweet basil leaves (or star anise if not available)
3 Crushed cloved of fresh garlic
3 Tablespoons of roughly chopped fresh corriander
2 Tins of coconut milk
4 Kaffir lime leaves
1 Tablespoon of sugar (optional)
1 Tin of bamboo shoots
1 Pack of baby sweetcorn cobs

Method
1) Fry the garlic, chillies and curry paste in the oil for a few minutes (medium heat)
2) Add the coconut milk, sugar, basil and lime leaves and cook for 5 minutes (medium heat)
3) Add the chicken and cook for 10 minutes (medium heat)
4) Add the bamboo shoots and sweetcorn (sliced lengthways) and cook for 5 minutes (medium heat)
5) Stir in the corriander and remove from heat

Serve with Thai fragrant rice and plenty of Thai beer.
